Before 1973, U.S. agricultural policy tried to prevent overproduction. The government paid farmers to keep some land fallow so crop supply stayed in balance with demand, prices held steady, and soil had time to recover.
Earl Butz changed all of that. As Secretary of Agriculture, his directive to American farmers was blunt: "Get big or get out." The new Farm Bill replaced supply management with direct commodity subsidies. The government would now pay farmers based on how much they produced, not how much the market needed. More corn, more money. More soy, more money. Overproduction wasn't a problem to be prevented anymore. It was the goal.
The consequences were immediate. Small diversified farms couldn't compete with subsidized commodity operations. By the 2020s, the U.S. was spending roughly $20 billion per year on commodity crop subsidies, the vast majority flowing to corn, soy, wheat, rice, and cotton. Fruits and vegetables, the foods every nutritionist on earth agrees are essential, received a fraction of that support.
Subsidies don't just support farmers. They distort prices. When the government pays to make corn artificially cheap, everything made from corn gets cheap too: high-fructose corn syrup, corn oil, corn-fed beef, and the thousands of ultra-processed products built from corn derivatives. A two-liter bottle of soda costs less than a bag of apples. A fast-food burger costs less than a salad. Those price signals aren't natural. They're engineered by policy, and they push the entire population, especially low-income families, toward the cheapest, most calorie-dense, most metabolically destructive foods available.
Traditional farming relied on crop rotation: alternating different plants across seasons to maintain soil health, break pest cycles, and replenish nutrients naturally. The new subsidy system made that economically irrational. Why rotate crops when the government pays a premium for corn and soy every single year?
So monoculture took over. Same crop, same land, year after year, across millions of acres. Then in 1996, Monsanto introduced Roundup Ready genetically modified seeds, crops engineered to survive direct spraying with glyphosate. Farmers could blanket entire fields with herbicide and kill everything except the modified crop. Glyphosate use increased roughly 15-fold after Roundup Ready adoption. American agriculture became a system where one company sold both the seed and the chemical required to grow it.
Before the subsidy-driven consolidation, the U.S. had hundreds of commercially grown crop varieties. Local food systems connected producers to consumers through short supply chains. That's gone now, replaced by a centralized industrial model: a handful of commodity crops processed in massive facilities and distributed through national chains. Regenerative practices like cover cropping, rotational grazing, and composting were economically punished by a subsidy system that only rewarded volume.
Just four companies now control roughly 80% of beef processing in the United States. Four control about 66% of pork processing. A handful of corporations (Cargill, ADM, Bunge, Louis Dreyfus) dominate the global grain trade. Monsanto (now Bayer) and a small number of competitors control most of the commercial seed supply.
This consolidation happened at every level at once. Small family farms got absorbed into industrial operations. Local slaughterhouses gave way to massive processing plants. Independent grocery stores lost out to big-box chains, and local restaurants were replaced by fast-food franchises. At each step, the system optimized for efficiency and cost reduction. The corner grocery that stocked local produce became a supermarket where 70% of products are ultra-processed.
The food and beverage industry spends over $175 million per year on federal lobbying, more than defense, mining, or automotive. That money doesn't improve nutrition. It maintains subsidies, weakens labeling requirements, blocks soda taxes, and keeps dietary guidelines vague enough to avoid threatening any major product category.
Former food industry executives regularly land senior positions at the USDA and FDA. The USDA has a contradictory dual mandate: it's responsible for both promoting American agricultural products and issuing dietary guidance for American health. It can't do both honestly. When the science says "eat less meat and sugar" and the industry the USDA promotes sells meat and sugar, the guidelines get softened.
The original USDA Food Pyramid, released in 1992, placed grains at the base and recommended 6–11 servings per day. That wasn't driven by nutritional science. The grain industry lobbied aggressively to make sure its products occupied the foundation of the national dietary framework. So the government that subsidized refined grains also told Americans to build their diet around them, the very foods that spike blood sugar and drive insulin resistance.
In 2016, researchers at UCSF uncovered internal documents showing that in 1967, the Sugar Research Foundation paid three Harvard scientists to publish a review in the New England Journal of Medicine downplaying the link between sugar and heart disease, blaming dietary fat instead. The funding wasn't disclosed. That paper shaped U.S. dietary policy for decades.
The "low-fat" era that followed saw food manufacturers strip fat from products and replace it with sugar to keep the flavor. Americans bought low-fat yogurt, low-fat cookies, low-fat salad dressings, all of them loaded with added sugar. Obesity, type 2 diabetes, and metabolic syndrome accelerated during exactly the period when the country was following this advice. The fat in whole foods like avocados, nuts, olive oil, eggs, and fatty fish wasn't the problem. The sugar that replaced it was.
The sugar industry borrowed tobacco's playbook: fund doubt, delay regulation, shift blame. Tobacco spent decades obscuring the link between cigarettes and lung cancer. Sugar did the same with metabolic disease. When the science threatens the product, the playbook doesn't change: don't change the product. Change the science.
The American diet isn't a free market outcome. It's a policy outcome. The Farm Bill subsidizes the crops that become the cheapest and most metabolically destructive foods. The lobbying apparatus makes sure those subsidies continue. The revolving door between industry and regulators keeps the guidelines from ever threatening the products. And the sugar industry's fifty-year disinformation campaign made sure the public blamed the wrong nutrient for two generations. Someone reaching for a $1 soda instead of a $4 bag of organic apples isn't making a "bad choice." They're making the only choice their income and the policy environment allow.
Ultra-processed food (UPF) now makes up approximately 58–60% of total caloric intake in the American adult diet. In children, it's over 67%. These aren't foods that have been washed, cut, or frozen. They're industrial formulations reconstituted from commodity crop derivatives (corn syrup, soybean oil, refined wheat flour), combined with emulsifiers, stabilizers, artificial flavors, and colorants, then engineered for a specific mouth-feel that maximizes consumption speed and overrides satiety signaling.
The food industry employs thousands of food scientists whose job is to find the "bliss point," the precise combination of sugar, salt, fat, and texture that maximizes craving while delaying fullness. This isn't conspiracy. It's an openly published discipline. Ultra-processed foods bypass appetite regulation that evolved over millions of years, and consumers eat more than they need. Not because they lack discipline, but because the product was built to produce exactly that outcome.
For roughly 99.5% of human evolutionary history, the omega-6 to omega-3 ratio in the diet sat between 1:1 and 4:1. Omega-3s produce anti-inflammatory signaling molecules. Omega-6s produce pro-inflammatory ones. The body needs both, but it evolved to manage them in near-equal proportion.
The modern Western diet has pushed that ratio to 15:1 to 25:1. The culprit is refined seed oils: soybean, corn, canola. Industrial products extracted through chemical solvents, cheap because they're made from subsidized crops. They're in virtually everything.
Every cell is enclosed by a phospholipid membrane, and the fatty acid composition of that membrane determines its fluidity, receptor function, and signaling capacity. When omega-6 overwhelms omega-3, membranes body-wide shift toward pro-inflammatory signaling with reduced fluidity, impaired insulin receptor sensitivity, and compromised mitochondrial function. The average American Omega-3 Index sits at 4–5%. The protective range is 8–12%.
Insulin resistance drives fatty liver disease (now present in 30–40% of American adults), visceral fat accumulation, dyslipidemia, hypertension, and systemic inflammation. It also drives cerebral insulin resistance, now recognized as a central mechanism in Alzheimer's, which researchers have started calling "Type 3 diabetes."
Monsanto claimed glyphosate was harmless because it targets the shikimate pathway, a metabolic route present in plants and microorganisms but absent in human cells. Technically true. Profoundly misleading. The human gut contains 38 trillion bacteria that rely on this pathway. Glyphosate selectively kills the beneficial ones while resistant pathogens expand into the vacated space. The result is dysbiosis, a state of microbial imbalance linked to IBD, autoimmunity, metabolic syndrome, depression, and neurodegeneration.
Glyphosate also damages the tight junction proteins that seal intestinal cells together. When these junctions break down (the condition often called "leaky gut"), bacterial endotoxins like LPS escape into the bloodstream and trigger chronic systemic inflammation the body was never built to sustain.
Before it was patented as an herbicide, glyphosate was patented as a metal chelator. It binds manganese, iron, zinc, and magnesium, making them biologically unavailable. In soil, that depletes crop mineral content. In the body, it impairs the enzymatic cofactors needed for mitochondrial defense, immune function, and DNA repair.
The EU has banned or restricted over 1,300 chemicals in food and consumer products. The U.S. FDA has banned roughly 11. That's not a disagreement about the science. It's a difference in regulatory philosophy, and American bodies absorb the consequences.
Healthy soil isn't dirt. It's a living matrix of bacteria, fungi, and organic matter that makes minerals bioavailable to plant roots. Monoculture strips specific minerals without replacing them. NPK fertilizers put back only three of the dozens of elements plants and humans need. Glyphosate kills the mycorrhizal fungal networks that help plants absorb minerals in the first place. The result is food with significantly fewer minerals per calorie, even when the crop looks identical to what was grown fifty years ago.
About 99% of U.S. meat comes from CAFOs: corn-fed, dosed with routine antibiotics, supplemented with growth hormones. The meat runs high in omega-6, low in omega-3 and CLA, and carries antibiotic-resistant bacteria at alarming rates.
Grass-fed beef, pastured poultry, and pastured eggs carry higher omega-3 content, 2–5x more CLA, higher fat-soluble vitamins (A, E, K2), and dramatically better omega-6:3 ratios. Regenerative grazing rebuilds soil, sequesters carbon, and produces nutrient-dense food at the same time.
A typical American eating a standard diet takes in excess calories (energy toxicity) from contaminated sources (chemical toxicity) that are stripped of the micronutrients the body needs to detoxify and repair itself. Too much of what damages it, too little of what protects it, arriving at the same time. Poisoned and disarmed in the same meal.
These three layers aren't separate problems. They're one system. The same subsidies that make corn and soy artificially cheap produce the seed oils that inflame cell membranes, the high-fructose corn syrup that drives insulin resistance, the feedlot meat with its inflammatory fat profile, and the monoculture fields that strip minerals from soil. The body doesn't experience these as separate categories. It takes them in as a single, compounding metabolic assault, three times a day, every day, across a lifetime.
A healthy microbiome ferments fiber into short-chain fatty acids (butyrate, propionate, acetate) that fuel colon cells and tamp down inflammation. It synthesizes vitamins like K2, biotin, folate, and several B vitamins. It trains the immune system to tell threats apart from food. It produces roughly 90% of the body's serotonin. And it maintains the intestinal barrier, the single-cell-thick lining that decides what enters the bloodstream and what stays out.
The gut holds 38 trillion microbial cells carrying over 3 million genes, compared to about 20,000 in the human genome. This second genome co-evolved with us over millions of years, and our biology assumes it's present, diverse, and functional. When the industrial food system strips that diversity, the body loses capabilities it was never meant to operate without.
Glyphosate disrupts bacterial pathways. Emulsifiers strip the mucus layer. Artificial sweeteners alter microbial composition at doses well within "safe" limits. Antibiotic residues in CAFO meat kill indiscriminately. And low dietary fiber starves the species that need it most. The ancestral diet provided 50–100g of fiber per day. Americans average 15 grams. The beneficial bacteria aren't just being poisoned. They're being starved.
When tight junctions are damaged, lipopolysaccharide (LPS), a potent immune activator from bacterial membranes, escapes into the bloodstream. What follows is chronic, system-wide inflammation called metabolic endotoxemia, now linked to insulin resistance, diabetes, cardiovascular disease, depression, autoimmunity, and Alzheimer's.
Alzheimer's patients have measurably different microbiomes: lower diversity, fewer butyrate producers, more pro-inflammatory bacteria. LPS has been found at elevated concentrations in Alzheimer's brains at autopsy. The biological bridge to the 42% lifetime dementia risk runs straight through the gut. Processed food destroys microbial diversity, the intestinal barrier breaks down, LPS and inflammatory molecules enter the bloodstream, chronic inflammation reaches the brain, and neurodegeneration accelerates.
Roughly 90% of the body's serotonin is produced in the gut, not the brain. Dysbiosis impairs that production. Clinical studies have shown that restoring microbial diversity can reduce symptoms of depression and anxiety. The processed food diet driving metabolic disease is also driving a mental health crisis, through the same organ, by the same mechanism.
The gut isn't a digestive tube. It's the command center of chronic disease. The industrial food system, through glyphosate, emulsifiers, artificial sweeteners, antibiotic residues, fiber starvation, and seed oil-driven inflammation, dismantles this ecosystem at every level. The 42% dementia risk, the obesity epidemic, the autoimmune explosion, the mental health crisis: these aren't separate epidemics. They're downstream consequences of a food system that destroyed the organ responsible for preventing all of them.
Roughly 42% of American adults are obese, not just overweight but clinically obese with a BMI of 30 or higher. Another 30% are overweight. Among children, obesity has tripled since the 1970s. About 38% of adults have prediabetes and 11%+ already have type 2 diabetes. Add those together and roughly half of all American adults have diabetes or prediabetes. Metabolic syndrome affects an estimated one in three.
These numbers aren't stable. They're accelerating. Adult obesity was below 15% in 1970, crossed 30% around 2000, and blew past 40% by 2020. NAFLD now affects 30–40% of adults and has become the fastest-growing indication for liver transplant. Every trend line started its steepest climb during the period when UPF consumption, seed oil use, and glyphosate application were all increasing at once.
Average lifespan: ~77–78 years. Average healthspan: ~63–66 years. That leaves a gap of about 12 years spent not living but being medically managed, cycling through specialists, juggling medications, navigating the complications of metabolic disease.
The U.S. spends over $4.5 trillion per year on healthcare. Roughly 86% goes to chronic disease management, the same diseases the food system produces. Prevention removes customers. Treatment creates them.
Lifetime dementia risk now approaches 42%. Alzheimer's is increasingly understood as "Type 3 diabetes": profound insulin resistance in the brain. When neurons can't access glucose, they starve, accumulate waste, and die. The metabolic cascade from Tab II doesn't stop at the neck. Brain pathology begins 15–25 years before symptoms show up.
The EU bans 1,300+ chemicals that remain legal in the U.S. American food companies manufacture two versions of the same product: one for Europe (without the banned additives) and one for America (with them). The companies know the chemicals aren't necessary.
Japan recommends eating 30 different foods per day. Schools serve freshly prepared meals with local ingredients. The obesity rate sits at roughly 4%. Compare that to America's 42%.
The Tsimane people of Bolivia have the lowest coronary artery disease ever recorded in any studied population. Among those over 75, 65% had zero detectable atherosclerosis. No UPF, no seed oils, no glyphosate. The diseases our food system produces simply don't appear when the food system doesn't exist.
These numbers don't describe a mystery. They describe a mechanism. The 12-year healthspan gap is the distance between what human biology can do and what the industrial food system allows. The 42% dementia risk is what decades of metabolic damage look like when they reach the brain. The Tsimane demonstrate the baseline: a human body fed whole food, free from industrial contamination, ages slowly and resists disease deep into the eighth decade. The distance between their outcomes and ours is the distance the food system has pushed us from our own biology. That distance isn't genetic. It isn't inevitable. It's policy. And policy can be changed.
In 1920, there were 6.5 million farms in the United States, home to roughly 32 million people. About 26% of the labor force worked in agriculture. But the connection to food ran much deeper than who lived on a farm. Nearly every American city had a public market where farmers brought their produce, meat, dairy, and eggs to sell directly to the people who would eat them. There were no corporate intermediaries. No distribution centers. No anonymous supply chains. The milk was fresh because the dairy farmer brought it that morning. The vegetables were seasonal because nobody had figured out how to ship a tomato 2,000 miles yet. And if the food was bad, you knew exactly who to talk to, because you'd see them at market next week.
Even city dwellers who didn't set foot on a farm bought food through short, transparent chains. The butcher sourced from local farms. The baker used flour from a regional mill. The egg man came to your door. Food was local by default, not as a lifestyle brand, but because the infrastructure to make it otherwise simply didn't exist yet.
By 2026, roughly 1% of Americans live on farms. The agricultural labor force has shrunk to under 2%. There are about 2 million farms left, and most of them are large industrial operations growing commodity crops (corn, soy, wheat) for processing, not for people. The average American has no idea who grew their food, what was sprayed on it, what the animal ate, or how far it traveled. They've never met a farmer. They probably couldn't name one. The relationship between eater and grower, which was the default condition for all of human history, has been severed so completely that most people don't even notice it's missing.
What replaced it is a supply chain. Impersonal, opaque, optimized for cost and shelf life, and controlled by companies whose names most consumers never see. The consolidation described in Tab I didn't just restructure farming. It put a wall between people and their food that gets thicker with every passing decade.
The USDA defines a food desert as a low-income census tract where a significant share of residents live more than one mile (urban) or ten miles (rural) from a supermarket or large grocery store. As of the most recent mapping data, approximately 54 million Americans live in these areas. That's roughly one in six people. In some cities, the numbers are worse. Memphis, Tennessee has about 32% of its population in food desert tracts. Detroit, Chicago, and parts of rural Appalachia are heavily affected.
Living in a food desert doesn't mean there's no food. There's food everywhere. It's just the wrong kind. The corner store sells chips, soda, candy, and maybe a sad bunch of bananas at an unmarked price. The gas station sells hot dogs rotating under heat lamps. What you can't find is fresh produce, quality meat, or anything that would help you feed your family a meal that doesn't accelerate the metabolic damage described in the preceding tabs.
Food deserts aren't randomly distributed. They concentrate in low-income neighborhoods and communities of color. Research consistently shows that non-white residents face about 30% higher rates of limited food access compared to white residents. The zip code predicts the diet, the diet predicts the metabolic profile, and the metabolic profile predicts the disease. This isn't a mystery. It's a map.
In 2017, researchers at the Rudd Center for Food Policy (UConn) published a finding that caught the food policy world off guard: food swamps predict obesity rates better than food deserts. A food swamp is a neighborhood where fast food outlets and convenience stores outnumber grocery stores so dramatically that the built environment itself pushes people toward junk food. The absence of a grocery store is a problem. But being surrounded by drive-throughs, dollar stores, gas station snack aisles, and vending machines turns out to be a bigger one.
The effect is strongest in communities where residents don't have reliable transportation. If the nearest grocery store is three miles away and the nearest McDonald's is three blocks away, the McDonald's wins. Not because people don't know better. Because the built environment makes the unhealthy choice the only convenient one.
There are over 222,000 fast food restaurants in the United States as of 2026. Fast food accounts for roughly one-third of all restaurant locations in the country. About 50 million Americans eat fast food on any given day, and almost half of all household food spending now goes to food eaten away from home, the vast majority at fast food and quick-service restaurants. The infrastructure of the American food landscape isn't designed around nourishment. It's designed around throughput: how many cars can cycle through the drive-through per hour, how many franchise units can be opened per quarter, how many calories can be delivered per dollar.
Farmers markets, farm-to-table restaurants, CSA (community-supported agriculture) boxes, pasture-raised meat, organic produce: all of it exists, and all of it represents what food is supposed to look like. But it's priced for affluent consumers, not because farmers are greedy, but because these producers are competing against a subsidized industrial system that has been artificially cheapened by decades of federal commodity payments. Organic apples cost 2–3x what conventional ones do. Grass-fed beef runs 2–4x more than feedlot. A CSA box that feeds a family for a week can cost more than a month of fast food.
The lowest-income 20% of American households already spend about 31% of their income on food, compared to 8% for the wealthiest quintile. Telling a family spending a third of their paycheck on eating to "buy organic" and "shop at the farmers market" isn't dietary advice. It's a joke, unless the policy environment that makes real food expensive and processed food cheap changes first.
Big food doesn't just compete with local producers. It actively crowds them out. National chains negotiate exclusive shelf-space contracts with grocery retailers, leaving independent brands and local suppliers without a point of sale. Franchise agreements saturate zip codes with drive-throughs. Zoning laws, often lobbied for by industry groups, make it easier to build a fast food restaurant than to open a farmers market or a community garden. Dollar stores, which carry almost no fresh food but undercut grocery prices on shelf-stable products, have been expanding into rural areas at a rate that closes what few remaining independent grocers existed.
The structural barriers aren't accidental. They're the predictable result of a system where the companies that profit from processed food have the capital, the lobbying power, and the distribution infrastructure to make alternatives functionally inaccessible for the people who need them most.
For the vast majority of human history, food was grown, raised, hunted, or gathered within a short distance of where it was eaten. Even as recently as the 1940s, roughly 40% of American produce came from home "victory gardens." People knew their soil. They knew their seasons. They knew whether the eggs were fresh because they'd seen the chicken that morning. The feedback loop between the quality of food and the health of the people eating it was direct and immediate. If something was wrong with the food, you knew, because you got sick and the source was obvious.
That loop is gone. A contaminated batch of lettuce now sickens people across twelve states before the source is even identified. An herbicide sprayed in Iowa ends up in the gut of a child in Ohio who's never seen a cornfield. The supply chain that feeds 330 million people is efficient in ways that a network of local farms never could be. But efficiency in this context means speed, volume, and cost reduction. It doesn't mean quality, safety, or nutritional density. And it definitely doesn't mean accountability.
The infrastructure for local food systems hasn't disappeared entirely. There are roughly 8,700 farmers markets operating in the U.S. today, up from fewer than 2,000 in the mid-1990s. CSA programs, urban farming initiatives, community gardens, farm-to-school programs, and regenerative agriculture operations are growing. They're still marginal compared to the industrial system, but they demonstrate that alternatives work when given room. The constraint isn't supply or demand. It's the policy environment that subsidizes the competition and puts a price wall around real food that most Americans can't climb over.
A hundred years ago, most Americans could walk to the source of their food. They could see the soil, talk to the farmer, judge the freshness for themselves. That proximity wasn't a lifestyle choice. It was the ordinary condition of eating. What replaced it is 222,000 fast food outlets, 54 million people in food deserts, and a price structure that makes a bag of Doritos cheaper than a bag of carrots. The severing of the relationship between people and their food supply is the precondition that makes everything else in this document possible. You can't poison people with industrial food if they can see how it's made. You can't sell them nutrient-depleted crops if they know what real produce tastes like. You can't feed them feedlot meat if they've ever watched a cow graze on pasture. Distance is the mechanism. The further people get from the source of their food, the easier it becomes to replace food with product, and health with profit.
